Fireworks in the Kitchen!
Over the 4th of July holiday weekend I was asked to house-sit and take care of an adorable little dachshund. Who can resist a weiner dog? I was also pleased to know that they have a Kitchen-Aid mixer on the counter! Since I don't have one currently, I would never pass up the opportunity to use one. With the holiday weekend ahead, a kitchen-aid mixer at hand and some festive red/blue star cupcake liners I decided to make S'More cupcakes!
One of my favorite snacks really is the S'more! I think that is why few Christmases ago I was given not one but three indoor S'more makers! All it takes to have S'mores year round is a little can of Sterno and you are in business. I picked out a graham cracker cake recipe and envisioned a S'more built above the graham cracker cake base. The graham cracker mix involved crushing hapless graham cracker squares into fine crumbs. Nothing relieves a week's worth of stress than taking a kitchen mallet to a ziploc bag of crackers! I almost didn't want to stop. So in between crushing crackers and listening to a little dachshund begging for a sample I was adding butter and sugar into the mixer. (Quick note - I have one simple rule when it comes to baking- if butter is involved it can only be Irish Butter. I seriously heart Irish Cows!) After the mixer magic had taken place I had a bowl of heavenly smelling batter. I snuck a little taste which the weiner dog did not miss and it took a lot of self control to stop! It was so good! I spooned the mix with an ice cream scooper into the cupcake pan and sent them to the oven.

Once the cupcakes were out of the oven I started toasting those marshmallows. I prefer them burnt to a crisp but who wants to see that on a cupcake? So with some borrowed patience I lightly toasted the mallows and layered a couple graham cracker squares on top of the cupcakes. Then I placed a square of Hershey's and a toasted marshmallow on top! Voila! It's the perfect All American cupcake to celebrate with anytime!

P.S You can take a still warm cupcake and place the chocolate directly on top along with a toasted marshmallow and you have a delicious ooey- gooey messy delight!
